Embracia Chef Shines at Maggie Beer Masterclass

Jason Fletcher, Embracia in Burpengary’s passionate chef recently attended a two day ‘Creating an appetite for Life’ masterclass in Melbourne, run by the Maggie Beer Foundation.

Thirty cooks and chefs from all over Australia attended the masterclass and took part in several presentations including menu planning, time management, food presentation, new texture modified food standards (IDDSI), and the importance of kitchen gardens.

Residents at Embracia in Burpengary are already benefitting from lovely fresh herbs in their meals from Jason’s well established kitchen garden.

Jason took part in a mystery box challenge, where he needed to create a dish from assorted ingredients.  The dish he chose to prepare was one featured on the current Embracia in Burpengary menu, a lentil bolognaise, topped with seasoned slice chicken, feta cheese and fresh herbs.

The dish was tasted by Maggie Beer and celebrity chef & author of nutrition books, Peter Morgan.  Jason was proud to say he had very positive feedback, with Maggie and Peter unable to fault his dish.

Jason is always looking for ways to improve what he does with dishes at Embracia in Burpengary and wants to continue connecting with residents through their meals. 

He is looking forward to applying what he learnt during the masterclass to his everyday routine, including never missing an opportunity to add flavour/nutrients naturally through use of natural stocks, fresh herbs and spices. 

His aim is to ensure the 120 residents at Embracia in Burpengary receive the protein and energy rich foods needed to ensure they continue to enjoy a nutritious and enjoyable dining experience, and enhanced quality of life.

Jason was able to take away fresh ideas and access to a great network of fellow passionate aged care chef/cooks which he anticipates will be a great resource for fresh ideas and recipes in the future.
